INGREDIENTS:

FOR THE GENOISE:

  • 2 eggs
  • 1/3 cup sugar
  • 1/3 cup flour
  • 2 tablespoons cornstarch

 

FOR THE BLUEBERRY CREAM:

  • 3 egg yolks
  • 1/4 cup sugar
  • 1 tablespoon flour
  • 1 tablespoon cornstarch
  • 1 1/2 cups warm milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter
  • 1 tablespoon gelatin
  • 2 cups blueberries
  • 1 cup heavy cream

 

FOR THE ICING:

  • 2/3 cup white chocolate
  • 1/2 cup strained blueberry juice

 

INSTRUCTIONS:

  1. For the génoise, preheat the oven to 350°F. Butter and flour 2 cake pans. In a bowl, whisk the eggs and sugar until pale and fluffy. Add the sifted flour and cornstarch. Pour half of the mixture into each pan. Bake for 20–25 minutes or until a knife inserted in the center comes out clean. Remove from the oven and let cool.
  2. For the blueberry cream, make a crème pâtissière: In a bowl, whip the egg yolks, sugar, flour, and cornstarch until pale and creamy. Stir in the warm milk. Cook over low heat, stirring, until thickened. Add the vanilla extract. Remove from heat and stir in the butter. Let cool.
  3. Soften the gelatin in a bit of water.
  4. Blend 2/3 cup of blueberries and strain. Reserve half of the strained blueberry juice for the icing.
  5. In a chilled bowl, whip the cream. Mix in the gelatin and half of the blueberry juice. Incorporate the mixture into the crème pâtissière. Chill.
  6. To prepare the icing, melt the remaining blueberry juice with the white chocolate in a small saucepan or in the microwave.
  7. Now assemble the cake. Fold the blueberries into the cream mixture. Place one layer of génoise on a cake plate. Spread the blueberry cream over it. Top with the second layer of génoise. Spread the icing over the top and sides of the cake.
  8. For decoration, you can add leftover blue icing, chilled and shaved, or more fresh blueberries.
