INGREDIENTS:

  • 2 cups of whole milk
  • 4 egg yolks
  • 1 cup of sugar
  • 1⁄2 cup of heavy cream
  • 1⁄2 teaspoon salt
  • 2 cups of blackberries

PREPARATION:

  1. Pass the blackberries through a fine-mesh sieve positioned over a mixing bowl. Use the back of a spoon to extract the juice and pulp while leaving behind the seeds. Set the blackberry juice and pulp aside.
  2. In a medium saucepan, whisk together the egg yolks and sugar until the sugar is completely dissolved.
  3. Add the whole milk, salt, and heavy cream to the egg yolk mixture. Whisk the ingredients until they are well combined.
  4. Place the saucepan over medium heat and cook the mixture for about 8 to 10 minutes, continuously whisking until it thickens to a custard-like consistency.
  5. Once the mixture has thickened, remove the saucepan from the heat source.
  6. Stir in the blackberry juice and pulp that was set aside earlier.
  7. To achieve a silky texture, pour the mixture through a fine strainer into a plastic bowl.
  8. Cover the bowl and refrigerate the mixture overnight. This resting period allows the flavors to meld and intensify.
