INGREDIENTS:

FOR THE DRY INGREDIENTS:

  • 1 cup (120 g) whole wheat pastry flour (use gluten-free)
  • 1 cup (140 g) cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chipotle powder
  • 1/4 teaspoon salt

 

FOR THE WET INGREDIENTS:

  • 2 cups (475 ml) unsweetened coconut milk or other nondairy milk (use soy-free)
  • 1 1/2 cups (246 g) corn kernels
  • 1 1/2 cups (248 g) cooked black-eyed peas or 1 can (15 ounces, or 425 g), rinsed and drained

 

INSTRUCTIONS:

  • Preheat the oven to 350°F (180°C, or gas mark 4). Oil three (12-muffin) mini muffin pans or line with paper liners.
  • To prepare the dry ingredients, mix all the ingredients together in a large bowl.
  • To prepare the wet ingredients, add the wet ingredients to the dry and mix until combined. Fill the muffin tins with the mixture and bake 12 to 15 minutes.
