INGREDIENTS:

  • Nonstick cooking spray
  • 1 pound (454 g) extra-firm tofu, drained, pressed, and cut into 1/4-inch (6 mm) thick slices, then cut on the diagonal to form two triangles
  • 1/2 cup (120 ml) vegetable broth
  • 1/4 cup (60 ml) dry white wine, or additional broth
  • 2 tablespoons (15 g) nutritional yeast
  • 1 tablespoon (15 ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried poultry seasoning
  • 1 teaspoon vegan bouillon paste (see Recipe Notes)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon garlic powder
  • Pinch ground white pepper

 

INSTRUCTIONS:

  1. Prepare the Baking Dish and Marinate: Preheat the oven to 400°F (200°C, or gas mark 6).
  2. Spray a 9 × 13-inch (23 × 33 cm) glass baking dish with nonstick cooking spray.
  3. In the baking dish, stir together the vegetable broth, dry white wine (or additional broth), nutritional yeast, olive oil, minced garlic, dried poultry seasoning, vegan bouillon paste, onion powder, fine sea salt, garlic powder, and ground white pepper until well combined.
  4. Add the sliced tofu to the marinade and turn to coat each slice thoroughly.
  5. Let the tofu marinate in the refrigerator for 1 hour to absorb the flavors.
  6. Bake the Tofu: After marinating, place the baking dish with the tofu and marinade in the preheated oven.
  7. Bake the tofu for 20 minutes, then turn the tofu slices over to ensure even cooking.
  8. Continue baking for an additional 15 to 20 minutes or until the tofu turns golden brown.
  9. If you prefer a firmer consistency, you can bake the tofu longer according to your preference.
  10. Serve and Enjoy: Once baked to perfection, remove the tofu from the oven.

RECIPE NOTE:

  • If vegan bouillon paste is challenging to find, you can use 2 teaspoons (12 g) of dried poultry seasoning and 1 teaspoon of salt as a substitute.
  • To make your own poultry seasoning, blend 1 tablespoon (8 g) nutritional yeast, 2 teaspoons (3 g) dried thyme, 1 teaspoon onion powder, 1/2 teaspoon dried sage, 1/2 teaspoon dried rosemary, 1/2 teaspoon dried marjoram, 1/2 teaspoon salt, and 1/2 teaspoon white pepper in a small blender until powdered. This will yield approximately 2 tablespoons (16 g) of seasoning.
