  • 2 tbsp. coconut oil
  • 1 cup chopped leeks
  • Salt & ground black pepper to taste
  • 1 cup sliced mushrooms
  • 1 cup sliced tomatoes
  • 4 pounds beef meat cut into stripes

 

INSTRUCTIONS:

  1. Put ingredients in the slow cooker.
  2. Cover, and cook on low for 7 to 9 hours.

 

NOTE:

  • Thickening Agents: If you prefer a thicker stew, you can incorporate a thickening agent such as flour, cornstarch, or a roux (a mixture of flour and fat). This helps to create a luscious and velvety texture in the stew. However, it’s important to note that the vegetables in the stew, particularly the mushrooms and leeks, release their natural starches during cooking, which can contribute to a naturally thickened consistency.
  • Make-Ahead and Freezing: Beef, leeks, and mushrooms stew can be prepared in advance, making it a convenient option for meal prepping.
