A whole cabbage, quartered and steamed in the pressure cooker, takes three minutes to cook to perfection. Still crisp, yet tender, all it needs is a little salt, pepper, and olive oil or butter. Serve it with corned beef or with roast beef, lamb, or pork entrees.

INGREDIENTS:
- 1 cup water
- 1 large head cabbage, cored and quartered
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons freshly ground black pepper
- 2 tablespoons extra-virgin olive oil or 2 tablespoons unsalted butter, melted
INSTRUCTIONS:
- Pour the water into the pressure cooker. Arrange the trivet and steamer basket in the bottom and put the cabbage in the basket. Lock the lid in place and cook at high pressure for 3 minutes.
- Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam. Arrange the cabbage in a serving dish and sprinkle with the salt and pepper. Drizzle with the oil and serve immediately.
