Basic Barbecue Sauce

This Basic Barbecue Sauce recipe is a simple and flavorful way to enhance your grilled or roasted dishes. INGREDIENTS:

  • 2 cups ketchup (to make your own, see the preceding recipe)
  • 1/2 cup dry red wine or water
  • 1/4 cup wine vinegar or rice vinegar
  • 1 tablespoon Worcestershire sauce or soy sauce
  • 1 tablespoon chili powder (to make your own, see page 66), or to taste
  • 1 tablespoon minced onion
  • 1 clove garlic, minced or crushed
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. In a small saucepan over medium-low heat, combine all the ingredients except salt and pepper.
  2. Cook the mixture, stirring occasionally, for about 10 minutes, allowing the flavors to blend.
  3. Taste the sauce and add salt and pepper if needed.
  4. Use the sauce immediately or let it cool, cover, and refrigerate for up to a week.

 

VARIATIONS:

  • Curry Barbecue Sauce: For a fragrant twist, add a teaspoon or more of curry powder along with the other ingredients.
  • Horseradish Barbecue Sauce: Add freshly grated horseradish or prepared horseradish to taste, up to 1/4 cup, for a milder or stronger kick.
  • Mustardy Barbecue Sauce: Reduce the vinegar to 2 tablespoons and add 1/4 cup Dijon or stone-ground mustard.
