Baked Pecan French Toast

INGREDIENTS:

  • 4 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1/4 teaspoon ground nutmeg or cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 loaf French bread, cut into 12 1-inch slices (8 ounces)
  • 1/2 cup chopped pecans
  • 2 tablespoons butter, melted
  • Vegetable oil cooking spray or melted butter
  • Maple syrup


DIRECTIONS:

  1. In a medium mixing bowl, whisk together the eggs, milk, sugar, nutmeg or cinnamon, and vanilla extract until well combined.
  2. Mist the bottom of a 12 by 8-inch glass casserole dish with vegetable oil spray or brush it with melted butter.
  3. Arrange the bread slices in a single layer in the prepared pan.
  4. Pour the egg mixture over the bread, ensuring each slice is evenly coated.
  5. Carefully turn the bread slices once to coat both sides with the egg mixture.
  6. Cover the pan with plastic wrap and refrigerate overnight to allow the flavors to develop.
  7. The next morning, preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
  8. Remove the pan from the refrigerator and discard the plastic wrap.
  9. Sprinkle the bread slices with chopped pecans and drizzle them with melted butter.
  10. Bake for 20 to 25 minutes, or until the bread slices puff up and the pecans turn deep brown, taking care not to let them burn.
  11. Serve the baked pecan French toast warm, accompanied by maple syrup for a touch of sweetness.


SPECIAL INSTRUCTIONS:

  • For a citrus twist, replace 2/3 cup of milk with orange juice and use 1/3 cup of milk.
  • To enhance the orange flavor, consider adding a little grated orange zest along with the pecans before baking.
