Baked Eggs with Morels

INGREDIENTS:

  • 1 cup morels or other mushrooms
  • 2 tablespoons butter
  • 1/2 cup heavy cream, preferably crème fraîche
  • 1/2 cup grated Gruyère cheese
  • 1/2 cup diced ham
  • Freshly ground pepper
  • 6 eggs, at room temperature
  • 6 slices of white or whole wheat bread

 

INSTRUCTIONS:

  1. If using dry morels, reconstitute them in water for 2 hours. Squeeze them dry and chop them.
  2. Preheat the oven to 350°F (175°C). Fill a baking dish one-third full of water. Butter 6 four-inch ramequins and place them in the baking dish.
  3. In a bowl, mix the heavy cream, diced ham, and chopped morels. Divide the mixture evenly among the ramequins.
  4. Create a well in the center of the cream mixture in each ramequin and carefully break an egg into it. Season with freshly ground pepper.
  5. Bake the ramequins in the preheated oven for about 20 minutes or until the egg whites are set while the yolks remain soft.
  6. Meanwhile, toast the slices of bread and cut them into fingers or smaller portions.
  7. Serve the baked eggs with morels alongside the toasted bread fingers or mouillettes.
