Baked Beef Meatballs

INGREDIENTS:

  • 1 pound lean ground beef
  • 2 tablespoons minced onion
  • 1/2 teaspoon minced garlic
  • 1 teaspoon grated Parmesan cheese
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

 

INSTRUCTIONS:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, minced onion, minced garlic, grated Parmesan cheese, eggs, salt, and pepper.
  3. Mix all the ingredients together using your fingers until well combined. Make sure the mixture is evenly mixed and the meat no longer feels slimy from the eggs.
  4. Shape the mixture into small meatballs, about the size of eggs, and place them on the prepared baking sheet.
  5. Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and no longer pink in the center.
  6. Serve the meatballs with a large Fiber Loaded salad dressed with Italian Dressing for a delicious and balanced meal.

  • This amount is for 4 servings. Adjust for 2 if you want, eat one serving, freeze one or prepare it as is for 4 servings and then freeze 3/4 for some tasty casserole recipes like “Beef Meatballs Casserole with Green Beans” or with “Beef Meatballs Casserole with Broccoli”.
