Asparagus Casserole Recipe

Perfect for spring, Asparagus casserole is rich and creamy. It gets a crunchy touch with fried onion topping. It is an easy and impressive side dish and comes together quickly. It is irresistibly good. During spring you can find plenty of asparagus in grocery stores. You can use those asparagus hanging out in your fridge for this easy cheesy casserole. You will prepare it quickly in no time and end up having the jaw dropping side for your spring meal.

For this recipe, both thin and thick asparagus will do but the timing for these differ since skinny asparagus bakes faster while the thick one will take longer to bake. The size does not matter but the quality does so choose fresh asparagus with tightly closed tops and moist and plump bottoms. Clean the asparagus under water. Then trim the woody ends of each stalk. Use a kitchen towel and pat dry the stalks. Other than asparagus this casserole also includes onions, mushrooms, cheese, sour cream and mayonnaise and a crunchy onion topping. There is no better way to enjoy fresh asparagus.

Preparation time: 20 minutes Cooking: 30 minutes Total time: 50 minutes

Ingredients:

  • 2 ½ pound asparagus trimmed and cut into 1 inch pieces
  • ½ stick butter
  • 8 ounce white mushrooms
  • ½ medium sweet onion chopped
  • ¼ cup all-purpose flour
  • 1 ¼ cup milk
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Swiss cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon paprika
  • 6 ounce French fried onions

Instructions:

  • Preheat oven to 350F.
  • Take a large pan and melt butter in it over medium heat. Add asparagus, mushrooms and onions. Stir occasionally for about 6 minutes.
  • Sprinkle the flour and stir continuously for 1-2 minutes.
  • Add milk gradually and cook until thickened.
  • Reduce heat to ow and add mayonnaise, both cheeses, sour cream, salt, pepper and paprika. Mix and remove the pan from heat.
  • Crush 1/3 of the can of fried onions and add in the mixture.
  • Grease a casserole dish and add the mixture in it. Add the rest of the fried onions on top.
  • Now bake for about 30 minutes and your favorite casserole is ready to serve.

 

Note: This casserole is a great make-ahead dish. You can assemble it a day before and just bake it before serving. Store the leftover casserole in airtight container in refrigerator. It will keep for 5 days. Reheat in oven at 350F while covered with foil for about 10 minutes. During the last few minutes uncover it so the top crisps up.
