Here’s a simple recipe for apple pie pops:

Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp sugar
  • 1 cup unsalted butter, cold and cubed
  • 4 to 6 tbsp ice water
  • 2 cups thinly sliced apples
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 egg, beaten
  • Coarse sugar for sprinkling

Instructions:

  1. In a large bowl, whisk together the flour, salt, and 2 tablespoons of sugar. Add the cubed butter and use a pastry cutter or your fingers to work it into the flour mixture until it resembles coarse crumbs.
  2. Gradually add the ice water, 1 tablespoon at a time, until the dough comes together. Divide the dough in half, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  4. In a separate bowl, mix together the sliced apples, 1/2 cup of sugar, cinnamon, nutmeg, and 2 tablespoons of butter.
  5. Roll out one of the dough disks to a thickness of 1/8 inch. Cut out circles using a cookie cutter or cup. Place a spoonful of the apple mixture in the center of each circle. Brush the edges of the circles with beaten egg.
  6. Roll out the second dough disk and cut out circles to use as the tops of the pops. Place the top circles over the apple mixture and pinch the edges together to seal. Brush the tops with beaten egg and sprinkle with coarse sugar.
