  • 2/3 pound leftover cooked meats
  • 1 onion, minced
  • 1 garlic clove, minced
  • 1/2 cup parsley, finely chopped
  • Pepper and salt
  • 1/2 cup flour
  • 3 tablespoons butter
  • 1 cup olive oil
  • 2 cups chicken stock

 

FOR THE PASTA DOUGH:

  • 3 eggs
  • 1 tablespoon wine vinegar
  • 1 tablespoon salt
  • 1 tablespoon water
  • 2 cups flour

 

INSTRUCTIONS:

  1. Prepare the pasta dough:In a bowl, combine the eggs, wine vinegar, salt, and water.
  2. Add the flour and knead until you obtain a smooth dough. You can also use a food processor for this step.
  3. Set the dough aside for 30 minutes, covered with a damp cloth.
  4. Prepare the filling: Finely chop the leftover cooked meats and place them in a bowl.
  5. Add the minced onion, minced garlic clove, and finely chopped parsley to the meats.
  6. Season the mixture with pepper and salt, according to your taste. Mix well to combine.
  7. Roll and fill the dough: Roll out the pasta dough into a rectangle, approximately 1/8 inch thick.
  8. Spread the meat filling evenly over the dough, leaving an empty border along one of the long edges.
  9. Starting from the opposite long side, roll up the rectangle jellyroll fashion, forming a long tube.
  10. Moisten the empty border with warm water and press it firmly to seal the roll.
  11. Cut and coat the pasta slices: Using a sharp knife, cut the stuffed pasta roll into slices about 1-2 inches thick.
  12. Spread flour in a soup plate.
  13. Coat each slice with flour, ensuring that all sides are coated evenly.
  14. Fry and simmer the pasta slices: In a skillet, heat the olive oil and butter.
