  2. Mix almond extract with almond butter. Whisk until the butter is thoroughly incorporated.
  3. While the cream and milk mixture is boiling, whisk egg yolks and sugar together until pale and foamy. An electric mixer can be used for efficient whipping.
  4. Gradually pour the hot milk mixture into the egg yolks while whisking constantly to avoid curdling.
  5. Return the milk and egg mixture to the saucepan and cook over low heat, stirring frequently, until the mixture thickens enough to coat a spoon. Avoid boiling and remove from heat if lumps appear.
  6. Allow the gelato mixture to cool completely, covered, in the refrigerator for a minimum of four hours, or overnight if desired.
  7. Once chilled, transfer the mixture to an Ice Cream Machine and follow the provided instructions for freezing.
