INGREDIENTS:

  • 1 to 2 tablespoons (15 to 28 ml) olive oil (use water)
  • 1/2 small onion, minced
  • 3 cloves garlic, minced
  • 2 cups (164 g) chopped eggplant
  • 1 cup (235 ml) water
  • 2 tablespoons (7 g) chopped sun-dried tomatoes
  • 1/2 teaspoon oregano
  • 1 1/2 cups (269 g) cooked white beans or 1 can (15 ounces, or 425 g), rinsed and drained
  • 1/3 cup (13 g) fresh basil, chopped
  • Salt and pepper, to taste

 

 

INSTRUCTIONS:

  1. Heat the oil in a large sauté pan over medium heat and cook the onion until translucent, about 5 minutes.
  2. Add the garlic and sauté 1 minute more.
  3. Add the eggplant, water, sun-dried tomatoes, and oregano and cook until the eggplant is translucent and soft, 15 to 20 minutes.
  4. Combine the eggplant mixture with the beans and basil in a food processor and process until smooth. Add salt and pepper to taste.
