CHERYL’S FAVORITE CITRUS COLLARDS

These greens have a great citrus flavor that masks the bitterness of collards that some people shy away from.

SOY FREE GLUTEN FREE OIL FREE

TOTAL PREP TIME: 20 minutes

TOTAL COOKING TIME: 15 minutes

YIELD: 4 servings

 

INGREDIENTS:

  • 1 cup (235 ml) water, plus more as needed
  • 1 teaspoon not-chicken bouillon
  • 5 to 6 cups (about 216 g) collards, washed and tough stems removed
  • Juice of 2 mandarin oranges or 1 cup (235 ml) orange or tangerine juice
  • A few dashes liquid smoke
  • 1 tablespoon (15 ml) tangerine balsamic vinegar
  • Salt, to taste (optional)

 

 

INSTRUCTIONS:

  1. In a large skillet, heat the water and bouillon over medium heat. Add the greens in batches so the greens in the pan have cooked down enough to add more.
  2. Add more water if needed and cook until tender, about 15 minutes.
  3. Add the juice, liquid smoke, and balsamic vinegar. Taste and adjust the seasoning, if needed. Also add salt, if needed. (If your bouillon has salt, you may not need to add any.)
