SIMPLE PANTRY SALSA

Sometimes you need some salsa fast and don’t want to or can’t go to the store. Maybe you’re already cozy in the house or it’s storming outside. Don’t panic—just grab a few cans of tomatoes from your pantry (or frozen salsa you’ve put up earlier).

SOY-FREE GLUTEN-FREE OIL-FREE

TOTAL PREP TIME: 10 minutes

YIELD: 3 1/2 cups (910 g)

 

INGREDIENTS:

  • 2 cans (14.5 ounces, or 410 g each) diced tomatoes or 3 cups (540 g) fresh
  • 1 can (4 ounces, or 115 g) green chiles
  • 2 cloves garlic, minced
  • 1 or 2 chipotles in adobo sauce, to taste (optional)
  • Salt, to taste
  • Add-ins such as fresh chopped onion, fresh chopped cilantro, diced jalapeños, chili powder, or ground cumin (optional)

 

 

INSTRUCTIONS:

  1. Combine all the ingredients in a food processor along with any of the extras you’d like to add. Blend until it’s as chunky or smooth as you like it. You can freeze leftovers!
