Sometimes you need some salsa fast and don’t want to or can’t go to the store. Maybe you’re already cozy in the house or it’s storming outside. Don’t panic—just grab a few cans of tomatoes from your pantry (or frozen salsa you’ve put up earlier).

TOTAL PREP TIME: 10 minutes
YIELD: 3 1/2 cups (910 g)
INGREDIENTS:
- 2 cans (14.5 ounces, or 410 g each) diced tomatoes or 3 cups (540 g) fresh
- 1 can (4 ounces, or 115 g) green chiles
- 2 cloves garlic, minced
- 1 or 2 chipotles in adobo sauce, to taste (optional)
- Salt, to taste
- Add-ins such as fresh chopped onion, fresh chopped cilantro, diced jalapeños, chili powder, or ground cumin (optional)
INSTRUCTIONS:
- Combine all the ingredients in a food processor along with any of the extras you’d like to add. Blend until it’s as chunky or smooth as you like it. You can freeze leftovers!
