Cinnamon And Honey Sweet Potatoes

Here’s another terrific treatment for sweet potatoes. This time, you steam them and finish them with a buttery cinnamon and honey sauce, which also works really well with carrots.

SERVES 6 TO 8

 

INGREDIENTS:

  • 1 cup water 6 medium sweet potatoes, peeled and cut into 1-inch chunks
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon ground cinnamon
  • 3 tablespoons honey

 

 

INSTRUCTIONS:

  1. Pour the water into the pressure cooker. Arrange the trivet and steamer basket in the bottom and put the sweet potatoes in the basket. Lock the lid in place and cook at high pressure for 7 minutes.
  2. While the sweet potatoes are cooking, melt the butter in a large skillet over medium-high heat. Stir in the cinnamon and honey and cook, stirring, for 3 to 4 minutes, until well blended. Remove from the heat, cover, and keep warm.
  3. Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam. Carefully remove the steamer basket and transfer the sweet potatoes to the skillet.
  4. Toss the sweet potatoes with the butter mixture in the skillet. Then transfer them to a serving bowl.
  5. Serve the sweet potatoes hot.
