Chipotle Butter

MAKES 1 cup

 

INGREDIENTS:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 chipotle chiles in adobo sauce, finely chopped
  • 1 tablespoon finely chopped fresh cilantro
  • 1 teaspoon finely chopped green onions (green and white parts)

 

 

INSTRUCTIONS:

  1. In a small bowl, stir together all the ingredients until blended.
  2. Store the butter in an airtight container and refrigerate for up to 1 month or freeze for up to 3 months.

 

 

VARIATIONS:

GARLIC PARSMEN BUTTER

  • Omit the adobo sauce, cilantro, and green onions.
  • Combine the butter with 3 minced garlic cloves, 1/4 cup freshly grated Parmigiano-Reggiano cheese, and 1 teaspoon dried oregano.

 

SUN-DRIED TOMATO BUTTER

  • Omit the adobo sauce, cilantro, and green onions.
  • Combine the butter with 1/4 cup sun-dried tomatoes packed in oil, drained and finely chopped; 2 tablespoons finely chopped fresh flat-leaf parsley; 2 minced garlic cloves; and 2 tablespoons finely chopped fresh basil.

 

TARRAGON DIJON BUTTER

  • Omit the adobo sauce, cilantro, and green onions.
  • Combine the butter with 2 tablespoons finely chopped fresh tarragon, 1 tablespoon finely chopped shallot, and 1 tablespoon Dijon mustard.
