PEPPERED MUSSELS

Preparation: 20 minutes

Cooking: 5 minutes

Servings: 4

 

INGREDIENTS:

  • 2 1/4 lbs. (1 kg) mussels, scrubbed and debearded1 clove garlic
  • 4 tbsp. (60 ml) extra-virgin olive oil
  • 8 slices crusty bread, toasted (optional)
  • fresh parsley, chopped,
  • to taste pepper

 

 

INSTRUCTIONS:

  1. Heat the oil in a skillet. Add the whole clove of garlic and cook until fragrant, but do not brown.
  2. Add the mussels, cover, and cook until they open.
  3. Discard any mussels that have not opened. Sprinkle the mussels generously with freshly ground pepper and parsley. Stir well. Transfer to serving bowls. Serve with the toasted bread, if using.
