INGREDIENTS:
- 2 1/4 lbs. (1 kg) mussels, scrubbed and debearded1 clove garlic
- 4 tbsp. (60 ml) extra-virgin olive oil
- 8 slices crusty bread, toasted (optional)
- fresh parsley, chopped,
- to taste pepper
INSTRUCTIONS:
- Heat the oil in a skillet. Add the whole clove of garlic and cook until fragrant, but do not brown.
- Add the mussels, cover, and cook until they open.
- Discard any mussels that have not opened. Sprinkle the mussels generously with freshly ground pepper and parsley. Stir well. Transfer to serving bowls. Serve with the toasted bread, if using.
