MISO GINGER DRESSING

Drizzle this gingery dressing over avocados, tomatoes, and shredded cabbage. You could also try it as a sauce for tofu or fish.

MAKES: 1/2 CUP

INGREDIENTS:

  • 1/2 teaspoon sliced fresh ginger
  • 1/2 teaspoon sliced garlic
  • 1/2 teaspoon sliced jalapeño
  • 3 tablespoons safflower oil
  • 3 tablespoons plain unsweetened coconut milk beverage (not canned)
  • 2 tablespoons red miso
  • 2 tablespoons fresh, strained lime juice
  • 1 teaspoon agave nectar

 

INSTRUCTIONS:

  1. Add the first three ingredients to the bowl of a mini food processor, and process until finely chopped, about 10 seconds. Add the remaining ingredients, and process until smooth, about 50 seconds.
