INGREDIENTS:

  • 700g Lilydale Free Range Lemon & Pepper Chicken Tenders (2 packs of 350g each)
  • 1 tablespoon olive oil
  • 500g small Brussels sprouts, finely sliced lengthways
  • 2 spring onions, trimmed and thinly sliced
  • 2 garlic cloves, finely chopped
  • 450g packet of 2 1⁄2-minute brown rice
  • 1/3 cup pepitas (pumpkin seeds)
  • 1/3 cup flaked natural almonds
  • 200g snow peas, trimmed and blanched
  • Fresh mint leaves and lemon wedges, for serving

 

Tahini Yoghurt Dressing:

  • 1⁄2 cup Greek-style natural yoghurt
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

 

METHOD:

  1. Start by cooking the Lilydale frozen Lemon & Pepper Chicken Tenders according to the packet directions.
  2. While the chicken is cooking, prepare the tahini yoghurt dressing. In a small bowl, combine the Greek-style natural yoghurt, tahini, lemon juice, salt, and pepper. Mix until well combined and set aside.
  3. Heat olive oil in a large frying pan over medium-high heat. Add the finely sliced Brussels sprouts, spring onions, and chopped garlic. Cook and toss the mixture for about 4-5 minutes, until the sprouts are just tender. Reduce the heat and keep warm.
  4. Prepare the 2 1⁄2-minute brown rice according to the packet instructions. Once cooked, place the rice in a bowl and add half of the pepitas and flaked almonds. Set aside the remaining pepitas and almonds for later.
  5. Assemble the nourish bowls: Divide the rice mixture, cooked Brussels sprouts mixture, blanched snow peas, and Lilydale Lemon & Pepper Chicken Tenders among shallow serving bowls.
  6. Drizzle the tahini yoghurt dressing over the bowls, and then scatter the remaining pepitas and flaked almonds on top.
  7. Garnish the bowls with fresh mint leaves and serve with lemon wedges for an extra zing of citrus flavor.
