INGREDIENTS:
- 4 eggs
- 400g chicken mince
- 2 tbs finely chopped dill
- 2 tbs finely chopped parsley
- 2 tbs HP sauce
- 2 tsp Dijon mustard
- 1 1/2 cups panko breadcrumbs
- Salt and pepper, to season
- 1/2 cup finely grated parmesan
- 1/2 cup plain flour
- 2 eggs, whisked
- Olive oil cooking spray
- Tomato chutney, to serve
- Baby rocket, to serve
- Cornichons, to serve
METHOD:
- Preheat the oven to 200°C. Line a baking tray with baking paper.
- Bring a small saucepan of water to a boil. Add eggs and simmer for 7 minutes. Drain and place the eggs in a bowl of cold water. Crack the shells and gently peel the eggs. Place them in a bowl of iced water.
- In a large bowl, combine chicken mince, chopped dill, chopped parsley, HP sauce, Dijon mustard, 1/4 cup breadcrumbs, salt, and pepper. Stir until well combined. Divide the mixture into 4 even portions.
- In a separate bowl, combine the remaining breadcrumbs and finely grated parmesan. Place flour in another bowl and whisk the eggs in a third bowl.
- Roll an egg in flour, shaking off any excess. Take one portion of the chicken mince mixture and flatten it in the palm of your hand. Place a boiled egg in the center and mold the mince around the egg, ensuring it’s completely covered. Coat the covered egg with flour, then dip it into the whisked egg, and finally, roll it in the breadcrumb and parmesan mixture for a generous coating.
- Place the prepared chicken scotch eggs on the lined baking tray. Spray them with olive oil cooking spray to promote browning.
- Bake the scotch eggs in the preheated oven for approximately 25 minutes, or until they are firm to the touch and golden-brown.
- Serve the Chicken Scotch Eggs alongside tomato chutney, a bed of fresh baby rocket leaves, and zesty cornichons for a burst of complementary flavors and textures.
