Dukkah Chicken Nourish Bowls

Drizzled with a velvety tahini yogurt dressing, this meal is an epitome of balance, taste, and well-being. INGREDIENTS: 

DUKKAH CHICKEN BOWL:

  • 4 medium Lilydale Free Range Chicken breast fillets, trimmed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup dukkah
  • 2 x 250g packets quick cook brown rice & quinoa
  • 1 medium just-ripe avocado
  • 1 tablespoon lemon juice
  • 2 Lebanese cucumbers, roughly chopped
  • 250g mini roma tomatoes, halved lengthways
  • 1/3 cup roasted almonds, roughly chopped
  • Mint leaves, pomegranate seeds, and lemon wedges, to serve

TAHINI YOGHURT DRESSING:

  • 1/2 cup Greek-style natural yoghurt
  • 1 tablespoon tahini
  • 2 tablespoons lemon juice

 

METHOD:

DUKKAH CHICKEN BOWL:

  1. Begin by preparing the Dukkah Chicken. Place the chicken breast fillets on a baking paper-lined board. Brush both sides of the chicken with 2 tablespoons of olive oil, then press the dukkah onto the chicken. Season with salt and pepper.
  2. Heat the remaining 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Add the seasoned chicken and cook for 5-6 minutes on each side, or until cooked through. Once cooked, transfer the chicken to a cutting board to cool.
  3. Meanwhile, prepare the quick-cook brown rice and quinoa according to the instructions on the packet. Allow it to cool. Slice the just-ripe avocado lengthways and drizzle with lemon juice to prevent browning. Set aside.
  4. Make the Tahini Yoghurt Dressing (see instructions below). Slice the cooled chicken into 1cm-thick strips.
  5. To assemble the bowls, divide the ingredients among shallow serving bowls. Arrange the sliced chicken, cooked rice & quinoa, chopped cucumbers, halved mini roma tomatoes, avocado slices, and chopped roasted almonds.
  6. Garnish the bowls with fresh mint leaves, vibrant pomegranate seeds, and a side of lemon wedges. Serve alongside the prepared Tahini Yoghurt Dressing.

TAHINI YOGHURT DRESSING:

  1. In a bowl, combine the Greek-style natural yoghurt, tahini, and lemon juice. Season with salt and pepper to taste. Mix until the ingredients are smooth and well incorporated.
