Christmas Shortbread Star Wreath

INGREDIENTS:

  • 250 g Western Star Chef’s Choice Cultured Unsalted Butter, chopped and softened
  • ²/³ cup pure icing sugar
  • 2 cups plain flour
  • 1 cup rice flour
  • ¼ cup cranberries
  • Zest of 1 orange
  • Icing sugar, for dusting

 

INSTRUCTIONS:

  1. Preheat your oven to 160°C / 140°C fan-forced. Line a large baking tray with baking paper and set it aside for later use.
  2. In the bowl of an electric mixer, combine the chopped and softened butter with the icing sugar. Beat the mixture until the ingredients are just combined.
  3. Add the plain flour, rice flour, cranberries, and the zest of one orange to the bowl. Mix these ingredients until they come together to form a cohesive dough.
  4. Transfer the dough onto a lightly floured surface and gently knead it until it becomes smooth and pliable.
  5. Place the dough between two sheets of non-stick baking paper and roll it out to a thickness of approximately 1 cm. Peel off the top layer of baking paper and use a star-shaped cookie cutter to cut out stars from the dough.
  6. Arrange the cut-out stars on the prepared baking tray in a circular pattern, allowing them to slightly overlap at the corners. Depending on the size of the stars, you can create one or two wreaths. Gently press down on the overlapping corners to seal them in place.
  7. Slide the baking tray into the preheated oven and bake the wreath(s) for approximately 25 minutes. Keep a watchful eye on them as baking times may vary. Once the stars take on a light golden hue, remove the tray from the oven and set it aside to allow the wreath(s) to cool completely.
  8. Just before serving, generously dust the star wreath(s) with icing sugar, adding a touch of wintery enchantment to your creation.

 

NOTES:

  • Keep an attentive eye on the shortbread as it bakes, as cooking times and oven temperatures can differ.
  • If you intend to hang the wreath, strengthen the back by attaching a cardboard ring using either icing or melted chocolate. This will ensure your wreath remains as delightful as the day it was made.
