  • 1 tbsp oil
  • 1 small onion, finely diced
  • 1 clove garlic, crushed
  • 2 tsp grated ginger
  • 1 large potato (250g), peeled and cut into 5mm dice
  • 1 carrot, cut into 5mm dice
  • 3 tsp curry powder
  • 1 tsp salt
  • 3 tbsp Rosella Organic Sweet Chilli Sauce, plus extra to serve
  • ¾ cup (185ml) organic vegetable stock or water
  • ¾ cup (90g) frozen peas
  • 5 sheets frozen puff pastry, just thawed
  • Beaten egg for glazing

 

INSTRUCTIONS:

Crafting the Curry Filling:
