  • 8 chicken thigh cutlets, with skin on
  • 1 brown onion, thinly sliced
  • ½ (500g) cauliflower, cut into florets
  • 375g Passage to India Butter Chicken Simmer Sauce
  • Steamed basmati rice, to serve
  • Roasted salted cashews, roughly chopped, to serve
  • Coriander sprigs, to serve

 

INSTRUCTIONS:

  1. Begin your culinary adventure by heating the vegetable oil in a large non-stick frying pan over medium heat. Introduce the chicken thigh cutlets to the pan, ensuring the skin side is down. Allow the chicken pieces to cook for approximately 10 minutes, or until they are beautifully browned on all sides. Once they have achieved that coveted golden hue, transfer the chicken to a plate and discard any excess fat that has accumulated in the pan.
  2. Add the thinly sliced brown onion and cauliflower florets to the pan. Let them sauté for about 5 minutes, until the onion softens and the cauliflower begins to develop a tender texture.
