SERVES 6

INGREDIENTS:

  • 350g penne or other pasta
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 500g lean beef mince
  • 400g Sweet Potato, peeled, coarsely grated
  • 1 small zucchini, coarsely grated
  • 2 tablespoons tomato paste
  • 400g can diced tomatoes
  • 1 cup salt-reduced beef stock
  • 4 sprigs thyme
  • 50g baby spinach leaves
  • 100g ricotta
  • ½ cup (40g) grated parmesan
  • 2 tablespoons pine nuts

INSTRUCTIONS:

  1. Embark on a culinary journey by cooking the pasta in a large pot of salted, boiling water until it reaches the perfect al dente texture. Once cooked, drain the pasta well and set it aside, ready to be the foundation of your delicious bake.
  2. In a medium pan, heat the olive oil over medium-high heat. Add the finely chopped onion and crushed garlic, sautéing them for 3-4 minutes until they become soft and fragrant. Introduce the lean beef mince, cooking until it’s beautifully browned, and break up any lumps with a spoon.
  3. Incorporate the coarsely grated Sweet Potato and zucchini into the beef mixture, allowing them to cook for about 2 minutes until they slightly soften and meld with the flavors.
  4. Stir in the tomato paste, diced tomatoes, salt-reduced beef stock, and the fragrant sprigs of thyme. Allow the mixture to simmer, uncovered, for 15-20 minutes, letting the flavors meld and the sauce thicken slightly. As a final touch, add the baby spinach leaves, allowing them to wilt beautifully into the mix.
  5. Meanwhile, preheat your oven to 220°C (200°C for fan-forced ovens), ensuring it’s ready to create that perfect golden crust.
  6. Combine the cooked pasta and the flavorful beef and sweet potato mixture in an 8-cup capacity ovenproof dish, creating layers of deliciousness.
  7. As the finishing touch, sprinkle the dish with dollops of ricotta, grated parmesan, and the delightful crunch of pine nuts, creating a symphony of textures that will elevate every bite.
  8. Slide the dish into the preheated oven, allowing it to bake for 15-20 minutes, or until the top turns a gorgeous golden hue and becomes irresistibly crisp.
  9. Once out of the oven, let the Sweet Potato Pasta Bake with Spinach and Pine Nuts cool slightly before serving, ensuring you and your guests can fully savor the complexity of flavors.
