  • 3 tablespoons (37 grams) St-Germain liqueur
  • 1 teaspoon (2.5 grams) freshly ground white pepper
  • 1 teaspoon (2.5 grams) freshly ground black pepper
  • ½ teaspoon (1 grams) cayenne, or to taste
  • 1 teaspoon (4.5 grams) dark brown sugar
  • 1 teaspoon (7 grams) honey
  • 1½ cups (410 grams) ketchup
  • 1 teaspoon (5 grams) liquid smoke (optional)

 

CUCUMBER RELISH:

  • ¼ English cucumber (85 grams)
  • 1½ tablespoons (14 grams) diced red onion
  • 1½ teaspoons (6 grams) granulated sugar
  • 1 tablespoon (15 grams) rice vinegar
  • 3 tablespoons (18 grams) peeled and shredded carrot
  • Fine sea salt

 

BRINE:

  • 1 cup (236 grams) water
  • 3 tablespoons (45 grams) fine sea salt
  • 2 teaspoons (8 grams) granulated sugar
  • 2 cups (472 grams) ice water
  • 3 (6-ounce/170-gram) bone-in, skin-on chicken thighs
  • 1 large ear corn, shucked
  • ½ teaspoon (2.5 grams) fine sea salt
  • ¼ teaspoon (0.6 grams) cayenne pepper
  • 2 tablespoons (28 grams) unsalted butter, melted
  • Olive oil

 

PREPARATIONS:

  1. Make the BBQ sauce by heating oil in a saucepan, sautéing onion and garlic, then adding St-Germain liqueur, peppers, sugar, honey, and ketchup. Simmer to combine flavors.
  2. Make the cucumber relish by preparing cucumber, onion, carrots, sugar, and vinegar. Season with salt and refrigerate.
  3. Prepare the brine by boiling water, adding salt and sugar, and stirring until dissolved. Stir in ice water and add chicken. Let sit for 30 minutes.

 

GRILLING INSTRUCTIONS:

  1. Grill the chicken and corn simultaneously until cooked and tender.
  2. Grill the pizza as instructed in the Grilled Pizza Master Recipe.
  3. Mound the shredded mozzarella on the half-cooked pizza, leaving a ¼-inch border.
  4. Return the pizza to the grill to cook the second side and melt the cheese.

 

COMPLETING THE PIZZA:

  1. Spread a generous coating of warm BBQ sauce (about ¼ cup/70 grams) over the surface of the pizza.
  2. Arrange the chicken over half of the pizza (if folding it) or over the top (if serving it open-faced).
  3. Spoon the cucumber relish over the top and sprinkle with corn.
  4. Fold the pizza in half and cut it into 3 wedges to serve sandwich-style, or cut the open-faced pizza into 6 wedges.
  5. Serve with additional BBQ sauce on the side.
