  • 1 cup raw cashews
  • 1 cup oats (LOWAN)
  • 1 packet fresh pitted medjool dates
  • 2 tbs cacao powder
  • 1/4 coconut oil, melted

 

AVOCADO FILLING

  • 4 cups shredded coconut
  • 1 tbs coconut sugar
  • 1/4 cup Natvia
  • 2 Avocados
  • 3/4 cup coconut oil, melted and cooled

 

CHOC TOP

  • 2 tablespoons cacao powder
  • 2/3 cup coconut oil, melted and cooled
  • 1/3 cup maple syrup

 

INSTRUCTIONS:

BASE

  1. In a food processor, blitz the cashews and oats until they form a rough crumb, ensuring not to make them too chunky.
  2. Add the medjool dates, cacao, and a pinch of salt to the food processor. Blend the mixture, slowly adding the melted coconut oil to bring it all together. You might not need to use all the coconut oil.
  3. Press the mixture evenly into a slice pan lined with baking paper and transfer it to the freezer to firm up.

 

AVOCADO FILLING

  1. In a clean food processor bowl, combine all the ingredients for the avocado filling to your desired consistency.
  2. Spread the avocado filling over the prepared base in the slice pan. Return it to the freezer and let it set for at least 30 minutes before adding the chocolate top.

  1. In a bowl, combine the cacao powder, melted coconut oil, and maple syrup for the chocolate top.
