  • ½ cup Japanese soy sauce

  • ½ cup sake
  • ½ cup mirin
  • 3 scallions, whites left whole, greens finely sliced
  • 1 medium clove garlic, minced or grated on a microplane (about 1 teaspoon)
  • 1 teaspoon minced fresh ginger
  • ½ teaspoon kosher salt
  • 1 tablespoon vegetable or canola oil
  • 1 whole chicken, 3½ to 4 pounds, butterflied according to the directions

 

INSTRUCTIONS:

  1. In a small saucepan, combine the soy sauce, sugar, sake, mirin, and scallion whites. Heat over medium-high heat until barely simmering, then reduce the heat to maintain a gentle simmer. Cook until the mixture is reduced by half, about 30 minutes. Remove from heat.
  2. Preheat your oven to 350°F (175°C).
  3. In a small bowl, combine the minced garlic, minced ginger, salt, and vegetable oil. Massage the mixture with your fingers to form a paste.
  4. Separate the chicken skin from the breasts. Spread the garlic and ginger paste evenly all over the chicken, ensuring it goes under the skin as well.
  5. Roast the chicken according to the Roasted Butterflied Chicken method (see recipe provided in a previous response), skipping step 2.
  6. About 10 minutes before the chicken is done, brush it all over with 1 tablespoon of the teriyaki glaze sauce.
  7. Once the chicken is fully cooked, remove it from the oven and allow it to rest for a few minutes before carving.
  8. Serve the teriyaki-glazed roast chicken sprinkled with the finely sliced scallion greens. Provide the remaining teriyaki sauce on the side for dipping or drizzling over the chicken as desired.
