INGREDIENTS
- 20 to 50 kirby or pickling cucumbers
- Coarse sea salt
- White vinegar
PREPARATIONS
- Stack the cucumbers neatly in a glass container.
- Add water to cover, then pour the water out into a measuring cup, making a note of how much water there is. Transfer the water to a large saucepan and add one-twelfth that amount of salt (so if you have 3 cups water, you would add ¼ cup salt), and stir to combine. Add 1 tablespoon of vinegar for every 20 small cucumbers, and stir to mix.
- Bring to a boil. Remove from the heat as soon as the water reaches a boil. Immediately pour the salted water into the glass container, covering the cucumbers.
- Place a small dish on top of the cucumbers to weigh them down and keep them submerged in the brine.
- Store in a cool, dark place for 4 to 5 days.
YIELD
- Serves 8 to 16
SPECIAL INSTRUCTIONS
- The pickles might be too salty for your taste after brining. If so, adjust the saltiness by rinsing the pickle slices in water or serving them in a bowl of cold water.
TIPS
- Adjust the number of cucumbers based on your preference and the quantity you wish to pickle.
- Experiment with the pickling time to achieve your desired level of tanginess.
