French Fries

Indulge in the irresistible delight of homemade French Fries, a classic and beloved side dish loved by all ages. Contrary to popular belief, double-frying these golden batons of goodness is not a hassle; it’s a double blessing! The double-fry technique not only ensures your fries remain crisp for longer, but it also allows you to prepare them in advance, with just a quick final fry right before serving. Starchy potatoes are the perfect choice, as waxy varieties won’t achieve that desired crispy texture. For added flair, feel free to dust your fries with various spice blends for a flavorful twist.

INGREDIENTS:

  • Peanut oil or neutral oil, like grapeseed or corn, for deep-frying
  • 2 pounds starchy potatoes
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. In a deep pan on the stove, pour at least 3 inches of oil and set the heat to medium-high, bringing it to a temperature of 300°F to 325°F.
  2. Scrub the potatoes and peel them if you prefer. Cut the potatoes into your desired shape, whether shoestrings or batons, ensuring they are fairly dry. Fry the potatoes in one batch, stirring occasionally, for 5 to 10 minutes, depending on the cut. The goal of this first frying is to cook them until they are just tender and starting to color slightly. Drain the batches on paper towels or a wire rack. (You can set the potatoes aside on the counter for up to an hour before proceeding. Remember to take the oil off the heat.)
  3. Reheat the oil to around 350°F. Fry and drain the potatoes again in the same manner until they become crisp and develop a deep, golden color, which should take just a couple of minutes. While still hot, sprinkle with salt and freshly ground black pepper, and serve immediately.

 

VARIATIONS:

Potato Chips:

  • Potato chips don’t require a preliminary frying step. You’ll need a deeper, larger pot or a deep fryer, as the potatoes will absorb more oil.
  • Use a mandoline or a sharp knife to cut the potatoes lengthwise into thin slices, ensuring they are not too wispy.
  • Heat the oil to around 350°F. Fry the potato slices in batches, using a slotted spoon or strainer to remove them from the hot oil as they turn golden. Drain them on paper towels or brown bags.
  • Season the chips with your desired seasonings while still hot and serve.
