Sea Green and Celery Stir-Fry

This sea green and celery stir-fry is a nutrient-rich and delicious vegetarian dish that can also be customized with the addition of protein like shrimp, chicken, or pork. The star of this stir-fry is the combination of various sea greens, such as arame, hijiki, dulse, wakame, and alaria, which bring a plethora of health benefits to the table. With the addition of celery and a flavorful mix of garlic, ginger, and scallions, this stir-fry becomes a powerhouse of taste and nutrition. INGREDIENTS:

  • 2 tablespoons neutral oil, like grapeseed or corn
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1/2 cup chopped scallions or onions
  • 1/2 cup thinly sliced kombu, soaked or simmered in water for 15 minutes
  • 2 celery stalks, thinly sliced lengthwise or julienned
  • 2 cups soaked and thinly sliced sea greens (arame, hijiki, dulse, wakame, alaria)
  • 1/4 cup vegetable stock or dashi or water, or a little more
  • 2 tablespoons soy sauce
  • 1 teaspoon dark sesame oil

 

INSTRUCTION:

  1. Preparation: Heat a large, deep skillet over medium-high heat for 3 or 4 minutes. Add the oil and, almost immediately, the minced garlic, ginger, and chopped scallions. Cook, stirring, for about 15 seconds.
  2. Adding Vegetables and Sea Greens: Add the sliced kombu, julienned celery, and soaked and thinly sliced sea greens to the skillet. Turn the heat to high and cook, stirring constantly, until the vegetables are tender, approximately 7 minutes. If the mixture appears dry, add a couple more tablespoons of liquid.
  3. Seasoning: Once the vegetables are tender, stir in the vegetable stock or dashi (or water), soy sauce, and dark sesame oil. Mix everything well and turn off the heat.
  4. Serving: Serve the sea green and celery stir-fry as a wholesome and nutritious main dish over whole grains like brown rice, quinoa, or farro. Alternatively, pair it with your preferred choice of protein, such as stir-fried shrimp, chicken, or pork.

 

VARIATIONS:

Sea Green and Mushroom Stir-Fry:

  • Enhance the flavor by adding 1 cup of sliced shiitake mushrooms to the stir-fry along with the kombu.

Sea Green and Noodle Stir-Fry:

  • Create a delightful noodle stir-fry by adding approximately 8 ounces of fresh Chinese egg noodles or dried Chinese wheat noodles or spaghetti to the mixture. Cook the noodles until tender and then toss them with a bit of oil to prevent sticking. Add the cooked noodles to the stir-fry and cook until they are heated through.
