- Shape the kofte mixture into 8 small patties. Heat the neutral oil in a large skillet, preferably nonstick, over medium heat. When the oil is hot, add the patties and cook them, rotating as necessary and turning once or twice, until they become crisp and golden on both sides, approximately 10 minutes.
