INGREDIENTS:

  • 2 cups heavy cream
  • 3 garlic cloves, minced
  • 1 head radicchio (10 ounces), cored and cut into ½-inch pieces
  • 2 ounces blue cheese, crumbled (½ cup)
  • 1 pound medium pasta shells
  • Salt and pepper
  • 1 cup walnuts, toasted and chopped

 

PREPARATIONS:

  1. In a 12-inch skillet, simmer the heavy cream and minced garlic over medium-high heat, whisking often, until the mixture thickens, approximately 5 to 7 minutes.
  2. Stir in the radicchio and ¼ cup of crumbled blue cheese. Continue cooking until the radicchio wilts and the blue cheese melts, about 3 to 5 minutes. Cover the skillet and set aside.
  3. Meanwhile, bring 4 quarts of water to a boil in a large pot. Add the pasta and 1 tablespoon of salt. Cook the pasta, stirring often, until it is al dente.
  4. Reserve 1½ cups of the cooking water, then drain the pasta and return it to the pot.
  5. Add the cream mixture and ½ cup of the reserved cooking water to the pot with the pasta. Toss gently to combine.
  6. Season the dish with salt and pepper to taste. If needed, add the remaining reserved cooking water gradually to adjust the consistency of the sauce.
  7. Sprinkle individual portions with the toasted walnuts and the remaining ¼ cup of crumbled blue cheese before serving.
