INGREDIENTS:

  • 3 (14.5-ounce) cans of fire-roasted diced tomatoes
  • 6 ounces sliced deli pepperoni, chopped fine
  • 3 garlic cloves, minced
  • 6 ounces smoked mozzarella, cut into ½-inch cubes
  • 1 pound ziti pasta
  • Salt and pepper
  • ¼ cup chopped fresh basil

 

PREPARATIONS:

  1. In a food processor, pulse the fire-roasted diced tomatoes until they are coarsely ground, about 12 pulses.
  2. In a 12-inch skillet, cook the chopped pepperoni over medium-high heat until it is rendered and crisp, approximately 5 minutes.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the processed tomatoes to the skillet and simmer until the sauce slightly thickens about 15 to 20 minutes.
  5. Meanwhile, place the mozzarella cubes on a plate and freeze them until slightly firm, about 10 minutes.
  6. In a large pot, bring 4 quarts of water to a boil. Add 1 tablespoon of salt and the ziti pasta. Cook the pasta, stirring often, until it is al dente.
  7. Reserve ½ cup of the cooking water, then drain the pasta and return it to the pot.
  8. Add the sauce, frozen mozzarella, and chopped basil to the pot with the pasta. Gently toss the ingredients to combine.
  9. Season the dish with salt and pepper to taste.
  10. If needed, add the reserved cooking water gradually to adjust the consistency of the sauce.
