Ziti with Stuffed Cherry Peppers, Pepperoni, and Tomato Sauce

Elevate your pasta dish with the bold and robust flavors of stuffed peppers. In this recipe, we take classic antipasto ingredients—provocative provolone, delectable prosciutto, and hot stuffed cherry peppers—and combine them to create a tantalizing sauce. The chopped pepperoni adds a spicy kick, while the onions bring depth and sweetness. Look for stuffed cherry peppers in the olive bar or pickle section of your local supermarket, or you can use jarred peppers as a substitute. With its vibrant flavors and satisfying textures, this ziti with stuffed pepper sauce will quickly become a favorite in your pasta repertoire.

INGREDIENTS:

  • 6 ounces sliced deli pepperoni, chopped fine
  • 2 onions, chopped fine
  • 8 oil-packed hot stuffed cherry peppers, rinsed, patted dry, and chopped fine
  • 3 garlic cloves, minced
  • 1 (15-ounce) can of tomato sauce
  • 1 pound ziti pasta
  • Salt and pepper

PREPARATIONS:

  1. In a 12-inch skillet, cook the chopped pepperoni over medium-high heat until rendered and crisp, approximately 5 minutes.
  2. Stir in the chopped onions and cook until they become softened and lightly browned, about 8 to 10 minutes.
  3. Add the chopped cherry peppers and minced garlic to the skillet, and cook for an additional minute until fragrant.
  4. Stir in the tomato sauce and let the mixture simmer until thickened about 10 minutes.
  5. Meanwhile, bring a large pot of water (4 quarts) to a boil. Add 1 tablespoon of salt and the ziti pasta. Cook the pasta, stirring often, until al dente. Reserve ½ cup of the cooking water, then drain the pasta and return it to the pot.
  6. Add the sauce to the cooked pasta and toss to combine. Season with salt and pepper to taste.
  7. If needed, add the reserved cooking water gradually to adjust the consistency of the sauce.
  8. Serve the ziti with stuffed pepper sauce.

SPECIAL INSTRUCTIONS:

  • Adjust the seasoning with salt and pepper according to your taste preference.
  • Gradually add the reserved cooking water as needed to achieve the desired consistency of the sauce.
  • Serve the pasta immediately for the best flavor and texture.

TIPS:

  • Feel free to adjust the amount of hot stuffed cherry peppers to suit your desired level of spiciness.
  • For added richness, you can sprinkle some grated Parmesan cheese over the pasta before serving.
  • Consider adding some fresh herbs, such as basil or parsley, as a garnish to enhance the flavors.
