Rice Cooked in Onions (Soubise)

Rice cooked in onions, also known as Soubise, is an impressive and delectable dish that is surprisingly easy to make. It’s perfect for entertaining guests as it stays warm for an extended period, allowing you to focus on other preparations. Soubise features tender, caramelized onions combined with basmati rice, creating a flavorful and aromatic dish that will delight your taste buds.

MAKES: 4 to 6 servings

TIME: 1 hour, largely unattended

 

INGREDIENTS:

  • Salt
  • 3 to 6 tablespoons butter
  • 4 or 5 large onions, sliced (6 to 8 cups)
  • Freshly ground black pepper
  • 1 cup basmati rice
  • Large pinch saffron threads (optional)
  • 1/2 cup cream (optional)
  • Chopped fresh parsley leaves for garnish

 

INSTRUCTIONS:

  1. Bring a saucepan of water to a boil and add salt.
  2. In a broad, deep skillet or ovenproof pot with a lid, melt 3 tablespoons of butter over medium heat. Add the sliced onions along with a large pinch of salt and freshly ground black pepper. Cook the onions, stirring occasionally, until they begin to soften, approximately 5 minutes. Reduce the heat to low and continue stirring occasionally to prevent sticking.
  3. Add the basmati rice to the boiling water and cook, stirring occasionally, until it loses its translucence, about 5 minutes. Drain the rice, leaving it wet, and add it to the onions. If using saffron, stir it in at this point. Mix well, lower the heat to the minimum setting, and cover the skillet.
  4. Cook the rice and onions for about 45 minutes, or until the onions are very soft, and the rice is fully cooked. Avoid stirring during the last 10 to 15 minutes to allow the bottom to brown slightly.
  5. Taste and adjust the seasoning as needed. If desired, stir in the cream and/or the remaining butter to add richness to the dish. Heat through once more, then turn off the heat and let it sit for about 10 minutes (or longer if needed). Soubise retains its heat well and can be gently reheated before serving. Garnish with chopped fresh parsley leaves.

 

VARIATIONS:

  • Vegan Soubise: Substitute olive oil or vegan butter for the butter and omit the cream. The dish will still be rich and flavorful without the use of animal products.
  • Soubise with Caramelized Onions: Instead of cooking the onions until just softened, continue cooking them over low heat until they turn golden brown and caramelized. This intensifies the sweetness of the onions, adding depth to the dish.
