INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 onion, chopped fine
  • 6 garlic cloves, minced
  • 1 pound meatloaf mix
  • ¼ cup heavy cream
  • 1 (28-ounce) can tomato puree
  • 1 (28-ounce) can of diced tomatoes, drained
  • Salt and pepper
  • 1 pound (2 cups) whole-milk ricotta cheese
  • 2½ ounces Parmesan cheese, grated (1¼ cups)
  • ½ cup chopped fresh basil
  • 1 large egg, lightly beaten
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 12 no-boil lasagna noodles
  • 1 pound mozzarella cheese, shredded (4 cups)

 

PREPARATIONS:

  1. Adjust the oven rack to the middle position and preheat the oven to 375 degrees.
  2. In a large Dutch oven, heat the olive oil over medium heat until shimmering. Add the chopped onion and cook until softened approximately 5 to 7 minutes.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add the meatloaf mix to the pot, breaking it up with a wooden spoon, and cook until no longer pink, approximately 4 minutes.
  5. Stir in the heavy cream and simmer until the liquid evaporates and only the fat remains about 4 minutes.
  6. Add the tomato puree and diced tomatoes to the pot and simmer until the flavors are well blended approximately 3 minutes. Season with salt and pepper to taste.
  7. In a separate bowl, combine the ricotta cheese, 1 cup Parmesan cheese, chopped fresh basil, lightly beaten egg, salt, and pepper. Mix until well combined.

 

SPECIAL INSTRUCTIONS:

  • Cover the baking dish tightly with aluminum foil that has been sprayed with vegetable oil spray to prevent the cheese from sticking.
  • Remove the foil during the last 25 minutes of baking to allow the cheese to brown and the lasagna to bubble.

 

TIPS:
