White Bean Purée

White Bean Purée is a versatile and delicious preparation that can be used as a side dish, sauce, spread, or dip. It’s incredibly easy to make and can be enjoyed in various ways. Whether served with bread, used as a dip for vegetables, or as a base for grilled seafood or vegetables, this creamy and flavorful purée is sure to impress. MAKES: 4 servings

TIME: 10 minutes with cooked beans

 

INGREDIENTS:

  • 3 cups cooked or canned navy or other white beans, drained but still moist (liquid reserved)
  • About 1 cup bean-cooking liquid, stock, or water
  • 3 tablespoons butter or extra virgin olive oil
  • Salt and freshly ground black pepper
  • Chopped fresh parsley leaves for garnish

 

INSTRUCTIONS:

  1. Purée the cooked white beans by using a food mill or an upright or immersion blender. Add enough liquid (bean-cooking liquid, stock, or water) to achieve a smooth but not watery consistency.
  2. Place the puréed beans in a microwave-safe dish or medium saucepan. Add the butter or olive oil. Gently heat the mixture until the butter melts and the beans are hot. Sprinkle with salt and pepper to taste.
  3. Garnish the White Bean Purée with chopped fresh parsley leaves.
  4. Serve the purée hot as a side dish, or enjoy it warm or at room temperature as a dip or spread.

 

VARIATIONS:

  1. Bean Purée with Roasted Garlic: Enhance the flavor by adding 15 to 20 cloves of Roasted Garlic and 1 teaspoon of fresh thyme leaves during Step 1.
  2. Garlicky Puréed Beans: Add an extra kick by including 1 teaspoon or more of minced garlic and a few fresh rosemary leaves or 1/2 teaspoon of dried rosemary during Step 1. For a zesty touch, incorporate lemon zest.
  3. Cheesy Puréed Beans: Make the purée more indulgent by stirring in 1/4 cup of finely grated Parmesan, pecorino, fontina, or Gouda cheese during Step 2. Heat until the cheese is melted, stirring frequently.
  4. White Bean and Celery Root or Parsnip Purée: For a heartier option, add 1 cup of cooked chopped celery root or parsnips during Step 1. This variation can serve as an excellent substitute for mashed potatoes.
  5. Black Bean Purée with Chipotles: Add a spicy and smoky twist by including 1 or 2 tablespoons of chopped canned chipotle chiles in adobo sauce during Step 1. Garnish with fresh cilantro.
