Carrot Salad with Cumin

The Carrot Salad with Cumin is a vibrant and refreshing dish inspired by North African flavors. This simple salad combines the natural sweetness of freshly grated carrots with the tangy notes of orange and lemon juices, all complemented by the earthy warmth of ground cumin. Quick to prepare, this salad is a perfect side dish or light lunch option that adds color and flavor to your table.

MAKES: 4 servings

TIME: 15 minutes

INGREDIENTS:

  • 1 1/2 pounds carrots, grated
  • Juice of 2 oranges
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin, or more to taste
  • Salt and freshly ground black pepper

INSTRUCTIONS:

  1. Use the julienne disk of a food processor or grate the carrots manually to achieve fine shreds. Alternatively, cut the carrots into 1/8-inch-thick slices for a different texture.
  2. In a separate bowl, whisk together the orange juice, lemon juice, extra virgin olive oil, and ground cumin until well combined.
  3. Season the dressing with salt and freshly ground black pepper according to your taste preferences. You can adjust the amount of cumin based on your desired level of spiciness and aroma.
  4. Pour the dressing over the grated carrots, ensuring all the carrots are coated. Toss the carrots gently to evenly distribute the dressing.
  5. Taste the salad and adjust the seasoning if needed. You can add more cumin, salt, or pepper to enhance the flavors.
  6. Serve the Carrot Salad with Cumin immediately as a refreshing side dish or chill it in the refrigerator for a while to let the flavors meld together.

VARIATIONS:

  • Beet Salad with Cumin: Cook and peel beets, then slice them. Replace the orange juice with minced garlic in the dressing and mix it with the beets.
  • Whole Baby Carrot Salad with Cumin: Substitute 1 1/2 pounds of whole baby carrots for grated carrots. Trim the green tops and halve the carrots if needed. Steam or boil them until barely tender, then shock and pat them dry. Proceed with the recipe as usual.

This Carrot Salad with Cumin brings together the natural sweetness of carrots and the aromatic flavors of citrus and cumin. The combination of fresh orange and lemon juices creates a bright and tangy dressing that complements the earthy notes of cumin. Whether enjoyed as a side dish or a light lunch, this salad is a delightful blend of flavors and textures. Experiment with the variations to explore different vegetable combinations and savor the refreshing taste of this North African-inspired salad.
