INGREDIENTS:

  • 2 pounds Yukon gold potatoes
  • 1/2 teaspoon salt
  • Pepper
  • 1 cup slab bacon, cubed

 

FOR THE FARCI:

  • 1 leek, white only
  • 3 small Swiss chard leaves
  • 1 small onion
  • 2 cloves garlic
  • 2 parsley sprigs

 

INSTRUCTIONS:

  1. To make the farci, grind leek, Swiss chard, onion, garlic, and parsley in the food processor, or chop finely by hand. Reserve.
  2. Change to the processor blade for julienning-grating. Grate potatoes. If you do not have a food processor, a simple grater will do fine.
  3. In a bowl, combine leek mixture with grated potatoes, salt, and pepper.
  4. In a pan, cook half of the bacon cubes until they give up some of their fat. Add farcidure mixture, pressing down into a flat cake. Reduce heat and cook for 10 minutes.
  5. Raise heat again briefly, so the bottom becomes brown and crisp. Reverse the galette onto a plate, cooked side up.
  6. Put the rest of the bacon into the pan and, when it has rendered a bit, slide the galette back into the pan and repeat the operation.
  7. When the second side is crisp and the center tender, serve.

  • Make sure to drain the grated potatoes well to remove excess moisture. You can use a clean kitchen towel or cheesecloth to squeeze out the liquid.
