Serves 4

INGREDIENTS:

FOR THE MOUSSE:

  • 1 cup heavy cream
  • 2 egg whites
  • 1/3 cup sugar
  • 1 tablespoon vanilla sugar

FOR THE COULIS:

  • 2 cups raspberries
  • 1/3 cup sugar

INSTRUCTIONS:

  1. To make the coulis, purée raspberries with sugar in the blender. Reserve.
  2. In a chilled bowl, whip the cream.
  3. In a dry bowl, whip the egg whites until they form soft peaks.
  4. Mix the whipped cream and whipped egg whites together using a whisk.
  5. Line a colander with cheesecloth and place it over a bowl.
  6. Pour the mousse into the colander and tamp it down. Refrigerate for 2 hours or more.
  7. In a small bowl, mix sugar and vanilla sugar.
  8. At serving time, remove the colander from the refrigerator and invert a rimmed dish over it. Flip to unmold the mousse. Peel off the cheesecloth.
  9. Pour raspberry coulis over the mousse and bring it to the table.
  10. Serve the mousse in individual dessert dishes, passing the sugar bowl separately.

VARIATION:

  • When berries are out of season, the mousse can be topped with crème fraiche and vanilla sugar for an all-white presentation.

TIPS:

  • Make sure to use chilled bowls and utensils when whipping the cream and egg whites. This will help them achieve the desired texture and volume.
  • When whipping the egg whites, ensure that there are no traces of yolk or fat, as this can inhibit the formation of peaks.
  • For the raspberry coulis, you can adjust the amount of sugar according to your taste preferences and the sweetness of the raspberries.
  • To create a smooth and velvety texture for the mousse, pass it through a fine-mesh sieve before transferring it to the colander.
  • Refrigerate the mousse for at least 2 hours to allow it to set properly and develop its flavors.
  • When unmolding the mousse, gently invert the colander onto a rimmed dish to release the mousse without causing any damage.
  • Serve the dessert immediately after adding the raspberry coulis to maintain its freshness and presentation.
  • For an extra touch, you can garnish the dessert with fresh raspberries or a dusting of powdered sugar.
  • If you prefer a sweeter mousse, you can add a bit more sugar to the whipped cream and egg whites mixture before chilling.
  • Experiment with different fruit coulis options such as strawberry or mango to create variations of this delicious dessert.

These tips will help you create a beautifully presented and flavorful White Mousse with Raspberry Coulis. Enjoy the delicate texture, the burst of fruity sweetness, and the overall indulgence of this delightful dessert.

To serve, simply unmold the mousse from the colander, remove the cheesecloth, and pour the raspberry coulis generously over the top. The vibrant red of the coulis contrasting with the white mousse creates an inviting presentation. Serve the mousse in individual dessert dishes, allowing each person to savor their own portion.

For a variation when berries are not in season, you can opt to top the mousse with a dollop of crème fraiche and a sprinkle of vanilla sugar. This variation adds a touch of richness and sweetness to the dessert, creating an elegant all-white presentation.

Prepare to delight your guests with this exquisite White Mousse with Raspberry Coulis. It’s a dessert that combines simplicity, elegance, and delectable flavors, making it the perfect finale to any special occasion or a treat to enjoy on its own.
