INGREDIENTS:

  • 1 2-pound monkfish tail, skinned, spine removed by fishmonger
  • 1 garlic clove
  • 2 slices pork slab, 1/2 inch thick
  • 2 tablespoons Dijon mustard
  • 10 slices bacon
  • Pepper
  • 2 cups white wine
  • 1 cup crème fraiche

 

INSTRUCTIONS:

  1. Preheat oven to 300°F.
  2. Stud the monkfish tail with slivers of garlic.
  3. Spread mustard onto the 2 slices of pork slab, and insert them between the halves of the monkfish where the spine used to be.
  4. Wrap the monkfish with bacon slices, making sure to cover it completely.
  5. Season the wrapped monkfish with pepper, but do not add salt.
  6. Tie the monkfish with kitchen twine to secure the bacon.
  7. Place the monkfish in an ovenproof dish and bake for 10 minutes.
  8. Remove the dish from the oven and pour white wine over the monkfish.
  9. Continue baking for another 20 minutes or until the fish is cooked and tender. You can test the doneness by inserting a fork into the flesh.
  10. Transfer the cooked monkfish to a serving dish.
  11. Stir the crème fraiche into the wine from the baking dish to make a creamy sauce.
  12. Pour the sauce over the monkfish and serve.
