INGREDIENTS:

  • 1 chicken, 4-5 pounds, cut into 8 pieces
  • Pepper and salt
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 shallots, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 pound white mushrooms, sliced
  • 1 tablespoon cognac
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 pound cancoillotte (soft French cheese)

 

INSTRUCTIONS:

  1. Preheat your oven to 350°F (175°C).
  2. Begin by seasoning the chicken pieces with salt and pepper. Dredge the chicken in flour, ensuring that each piece is coated evenly.
  3. In an ovenproof casserole, heat the olive oil and butter over medium heat. Once hot, add the chicken pieces and brown them on all sides. This process helps seal in the juices and adds flavor to the chicken. Once the chicken is nicely browned, cover the casserole and transfer it to the preheated oven. Allow the chicken to finish cooking for about 30 minutes or until it is cooked through and tender.
  4. Once the chicken is done, remove the casserole from the oven and set the chicken aside. In the same fat, sauté the thinly sliced shallots, minced garlic, and sliced mushrooms until they become tender and lightly browned.
  5. Pour in the cognac and carefully ignite it to flambé the ingredients. Once the flames subside, add the chicken stock to the casserole and allow it to cook down until it is reduced by half.
  6. Stir in the heavy cream and cancoillotte cheese, continuing to stir the mixture until the sauce thickens and becomes creamy. Taste the sauce and adjust the seasoning with salt and pepper, as needed.
  7. Return the chicken pieces to the sauce and simmer them in the sauce for an additional 5 minutes to allow the flavors to meld together.
