Iced Gazpacho

Iced Gazpacho is a delightful and refreshing dish, perfect for warm summer days or as a light starter for any meal. The combination of fresh tomatoes, cucumber, onion, and herbs creates a vibrant and flavorful base, while the addition of day-old bread adds body and texture to the soup.

Serves 6 

 

INGREDIENTS:

  • 2 slices day-old bread
  • 2 pounds tomatoes, peeled and seeded
  • 1 cucumber, peeled and cubed
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • 1/2 cup basil leaves
  • 1/2 cup cilantro, finely chopped
  • Pepper and salt
  • Garlic croutons, for garnish

 

INSTRUCTIONS:

  1. Prepare the garlic croutons according to your preferred method. Once they are cool, set them aside for later use.
  2. Set aside half of the cubed cucumber, 1 tablespoon of basil leaves, and 1 tablespoon of chopped cilantro in the refrigerator for garnishing.
  3. In a blender, combine the remaining cucumber, tomatoes, onion, garlic cloves, olive oil, sherry vinegar, basil leaves, cilantro, and season with pepper and salt to taste.
  4. Blend the ingredients until smooth and well-combined. Taste the gazpacho and adjust the seasoning if needed.
  5. Refrigerate the gazpacho for several hours or overnight to allow the flavors to meld and the soup to chill thoroughly.
  6. When ready to serve, pour the chilled gazpacho into individual bowls or glasses.
  7. Garnish each serving with the reserved cubed cucumber, a sprinkle of basil leaves and cilantro, and a few garlic croutons on top.
  8. Serve the Iced Gazpacho well chilled and enjoy the refreshing flavors of this classic Spanish cold soup.
