Baked Endives and Ham

INGREDIENTS:

  • 6 good endives, trimmed and cut in half lengthwise
  • Juice of 1 lemon
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 6 tablespoons Neufchâtel cheese, crust removed
  • 1/4 teaspoon grated nutmeg
  • Pepper and salt
  • 6 large slices of ham, cut in half

 

INSTRUCTIONS:

  1. In a kettle, bring salted water and lemon juice to a boil. Add the endives and cook until just tender, approximately 15 minutes. Once cooked, refresh the endives in cold water and then drain them.
  2. In a saucepan, melt 2 tablespoons of butter. Add the flour and cook for a few minutes, whisking continuously, until the flour is well incorporated and doesn’t brown.
  3. Slowly whisk in the cold milk, ensuring there are no lumps. Bring the mixture to a boil while continuing to whisk. Reduce the heat and let it simmer for 10 minutes.
  4. Remove the saucepan from the heat and stir in the Neufchâtel cheese, grated nutmeg, and season with salt and pepper to taste.
  5. Preheat the oven to 350°F (175°C).
  6. Take each half of the endives and wrap them individually with a half-slice of ham. Place the wrapped endives in a buttered gratin dish.
  7. Pour the cream sauce over the wrapped endives, ensuring they are well covered.
  8. Bake in the preheated oven for approximately 20 minutes or until the dish is gratinéed and the sauce is bubbly and golden.
  9. Serve the Baked Endives and Ham hot.
