INGREDIENTS:

  • 3 tablespoons olive oil
  • 6 onions, coarsely cut
  • 6 cups fish or vegetable stock
  • 6 potatoes, quartered

  • Pepper and salt
  • 16 scallops
  • 2 tablespoons crème fraiche
  • 1 egg yolk
  • 2 cups white wine

 

INSTRUCTIONS:

  1. In a large kettle, heat olive oil and sauté onions until golden.
  2. Pour in the stock. Add potatoes, carrots, pepper, and salt, and simmer until tender.
  3. In a bowl, mix cream and yolk. Set aside.
  4. When vegetables are cooked, add wine and scallops. Continue to cook over very low heat for 2 1/2 minutes.
  5. Remove from fire. Add cream and yolk. Stir gently.
  6. Adjust seasoning, and serve.
