INGREDIENTS:

  • 1 pound white beans
  • 4 tablespoons butter
  • 1 carrot, peeled and sliced

  • 1 bouquet garni
  • Pepper and salt
  • 4 thick slices cooked ham

  1. Soak the white beans in water for 24 hours. Drain them.
  2. Bring a pot of water to a boil and add the beans. Cook for 5 minutes, then drain.
  3. In a heavy saucepan, melt the butter and sauté the beans over low heat. Add the carrot, onion, garlic, and bouquet garni. Cover with cold water.
  4. Bring the mixture to a boil, then reduce the heat and simmer covered for 1 1/2 hours. Halfway through the cooking, season with pepper and salt to taste.
  5. Meanwhile, sauté the ham slices for 2 minutes on each side.
  6. Serve the ham with the white beans.
